Homemade granola
Serves: 3 cups | Prep Time: 5 minutes | Cook Time: 20 - 30 minutes
Ingredients
3 cups rolled oats (certified gluten-free if desired)
1/4 cup coconut oil, melted
1/3 cup honey or pure maple syrup
1/2 tsp. cinnamon
1-2 tsp. vanilla extract
Pinch of salt
Optional add-ins (½ - 1 cup):
Nuts and seeds
Dried fruit (mix in after baking)
Coconut
Chocolate (mix in after baking)
Directions
Preheat oven to 300 degrees.
In a large bowl, add the rolled oats, coconut oil, honey, cinnamon, vanilla, and salt; mix well until thoroughly combined.
If adding nuts, seeds, coconut, or any mix-ins you want to bake with the oats, add them now, stirring to combine, and add 1-2 tbsp. more honey if needed.
Line a baking sheet with parchment paper. Spread the granola mixture evenly and bake for 20 to 30 minutes, stirring halfway through or every 10 minutes. Granola should be a light golden brown.
Let the granola cool completely, then store it in an airtight container for up to 2 weeks.
